Savory Chicken and Vegetable Soup
Serves : 4

Cooking time : 40 minutes
Ingredients :
11/2 liters water
300g boneless chicken meat, skin removed, cut into bite-sized pieces
1 large or 2 small carrots, cut into bite-sized chunks
250g pumpkin, skin and seeds removed, cut into chunks
180g bamboo shoots, sliced into bite-sized chunks
3 teaspoons dashi powder
3 tablespoons soy sauce
3 tablespoons sake
3 tablespoons mirin
Method :
- Bring water to the boil in a large saucepan. Add the chicken pieces and cook over medium heat for 2 minutes, removing any scum from the surface with a spoon or paper towel.
- Add carrot, pumpkin and bamboo shoots.
- Stir in the dashi powder, soy sauce, sake and mirin. Return to the boil and cover the pan. Boil rapidly for 5 minutes, then reduce heat and simmer covered for 20 minutes, or until vegetables are tender.
- Let stand for 10 minutes before serving in small bowls with a little of the cooking liquid.
