Savory Chicken and Vegetable Soup

Serves : 4
Preparation time : 20 minutes
Cooking time : 40 minutes

Ingredients :

11/2 liters water
300g boneless chicken meat, skin removed, cut into bite-sized pieces
1 large or 2 small carrots, cut into bite-sized chunks
250g pumpkin, skin and seeds removed, cut into chunks
180g bamboo shoots, sliced into bite-sized chunks
3 teaspoons dashi powder
3 tablespoons soy sauce
3 tablespoons sake
3 tablespoons mirin


  1. Bring water to the boil in a large saucepan. Add the chicken pieces and cook over medium heat for 2 minutes, removing any scum from the surface with a spoon or paper towel.
  2. Add carrot, pumpkin and bamboo shoots.
  3. Stir in the dashi powder, soy sauce, sake and mirin. Return to the boil and cover the pan. Boil rapidly for 5 minutes, then reduce heat and simmer covered for 20 minutes, or until vegetables are tender.
  4. Let stand for 10 minutes before serving in small bowls with a little of the cooking liquid.
